The Ancient Egyptians not only made offerings of honey to their gods, but also used it as an embalming material and a dressing for wounds. The possible health benefits of consuming honey have also been documented in early Greek, Roman, and Islamic texts.
Although many of the health benefits and healing power of honey have yet to be scientifically substantiated, raw honey is found to contain a varying level of an enzyme called glucose oxidase. This enzyme reduces atmospheric oxygen (O2) to hydrogen peroxide (H2O2), a compound that acts as an anti-bacterial barrier and natural preservative.
What makes manuka honey so unique?
Manuka Honey collected by bees from the Manuka shrubs (Leptospermum scoparium, New Zealand tea tree) not only contains hydrogen peroxide activity but also non-peroxide activity. Researches clearly indicate that this additional non-peroxide activity is due to the presence of Dihydroxyacetone (DHA) and Methylglyoxal, which has phytochemical-derived anti-viral and anti-bacterial properties. If a honey does not have DHA, it is most likely not Manuka Honey.
Manuka Honey sold at retail outlets typically bear stickers indicating their UMF level, UMF (Unique Manuka Factor) is a rating of a Manuka honey's stable, non-peroxide anti-bacterial properties. The term is coined by Dr Peter Molan of Walkato University in New Zealand 20 years ago, when he discovered a special compound wit exceptional anti-bacterial and anti-fungal properties in some strains of Manuka Honey. As he did not know what that specific compound was at that time, he named it "Unique Manuka Factor".
He also developed a scale from 0 to about 20 to help quantity how much UMF is present in a specific batch of Manuka Honey. Any manuka honey above a UMF of 15 is considered to have very high levels of anti-bacterial and anti-viral activity.
The Significance of UMF
Since Dr Molan's discovery, there has been a considerable amount of international research and testing techniques undertaken on the unique properties of Manuka Honey. While research carried out at Walkato University has shown manuka honey testing UMF 5+ and above has strong properties manuka honeys are packed and sold as table grade honey, as no much medical claim can be made about the honeys on the labels.
UMF was later developed as a trademark by the UMF Honey Association, formed by a group of New Zealand's leading honey producers, who saw the potential of promoting manuka honey based on its uniqueness in the international market.
